I have recently switched from doing field work from "normal mode" to "touch mode" on an android pad. I can't find the possibility to add or delete single points on eg a line. Doesn't this option exist in touch mode?

Yes, but it isn't as handy as the ole CNTRL+Click.

At the bottom of your screen you will see buttons that say:
"Snap", "Point/Angle", and "Toggle Dash".

Select the "Point/Angle" button to make it active. Then, if you have a line selected, and you click on a point, it will disappear. If you click on a part of the line with no point, it will add one. It requires a bit of zooming in or else you will end up deleting a bunch of points when you really wanted to add one. Hope this helps.
