Is there any way to manage routes, deleting or re-ordering them ?

Ordering by most popular or most recently used would work.
I've just moved work locations, so I have a bunch of new ways to run-to-work but they are all at the bottom of my routes list.

They're alphabetical, so edit the ones you don't use any more and put a Z at the beginnings of their names.

No, beg to kind of differ. Yes they are alphabetical if clicking on the header tab. No - they are in order of entry when route is selected as part of new training entry.

Ah, ok, I only looked in that first place. I guess I'm a little surprised that they don't self-sort the way shoes do.

If your screen is just the right size and you have the correct number of routes you can get the drop down menu to become a "drop up" menu, and then the most recent entries are at the bottom, nice and close to your mouse pointer.

How do I self sort my shoes? I want them to be in order of those that least hurt my feet to those I should demolish on the next AR I do.

Use the ones that don't hurt, and log it. If you wear the ones that hurt, well, you get what you deserve.
